Garlic Herb Butter Salmon with Asparagus
Pan-seared salmon fillet basted in a fragrant garlic-herb butter sauce and served alongside crisp-tender roasted asparagus.
INGREDIENTS
6.5 oz Salmon fillet
1 cup Asparagus spears
1 tbsp Grass-fed butter
2 cloves Garlic
1 tsp Fresh parsley
1 tsp Fresh dill
0.5 tsp Sea salt
0.25 tsp Black pepper
1 tsp Extra virgin olive oil
0.5 medium Lemon
PREPARATION
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Trim the woody ends off the asparagus and toss the spears with extra virgin olive oil and a pinch of salt.
Heat a large skillet over medium-high heat. Once hot, place the salmon skin-side up in the pan and sear for 4 to 5 minutes until a golden crust forms.
Flip the salmon fillet and add the grass-fed butter, minced garlic, chopped parsley, and chopped dill to the pan.
As the butter melts and foams, use a spoon to continuously baste the salmon with the garlic-herb butter for another 3 to 4 minutes.
Push the salmon to one side of the pan (or use a separate skillet) to sauté the asparagus for 5 minutes until vibrant green and crisp-tender.
Remove from heat and squeeze the fresh lemon juice over the salmon and asparagus before serving.
