PREPARATION
Peel and cube the sweet potato, then boil in water for 12-15 minutes until soft.
Drain the sweet potato and mash until smooth, seasoning with a pinch of sea salt.
Heat half the olive oil in a skillet over medium-high heat.
Season the salmon with salt and pepper, then sear for 4-5 minutes per side until the skin is crisp.
Remove salmon and add the remaining oil, minced garlic, and green beans to the same skillet.
Sauté the green beans for 5-6 minutes until tender-crisp.
