Seared Salmon with Steamed Green Beans and Brown Rice
Pan-seared salmon fillet served alongside fiber-rich steamed green beans and nutty brown rice, finished with a squeeze of bright lemon and a hint of garlic.
INGREDIENTS
7 oz Wild Atlantic Salmon fillet
1/2 cup cooked Brown Rice
1 cup fresh Green Beans
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
1 tbsp fresh Lemon Juice
Pinch of Sea Salt and Black Pepper
PREPARATION
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Place the green beans in a steamer basket over boiling water and steam for 5-7 minutes until tender-crisp and vibrant green.
While the beans steam, heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4 minutes until a golden crust forms.
Flip the salmon and add the minced garlic to the pan, cooking for another 3-4 minutes until the salmon is cooked through and the garlic is fragrant.
Warm the pre-cooked brown rice in a small saucepan or microwave.
Plate the salmon alongside the brown rice and steamed green beans.
Drizzle the fresh lemon juice over the salmon and vegetables before serving.
