Seared Salmon with Garlic Green Beans and Mashed Cauliflower
Pan-seared wild salmon served over creamy mashed cauliflower and garlic-sautéed green beans, finished with a squeeze of lemon and toasted garlic.
INGREDIENTS
6.3 oz Wild Sockeye Salmon fillet
300g Cauliflower florets
100g Fresh green beans
1.25 tbsp Ghee
2 cloves Garlic, minced
1 tbsp Fresh lemon juice
Sea salt and black pepper to taste
PREPARATION
Steam the cauliflower florets until very tender, about 10-12 minutes.
While cauliflower steams, trim the ends of the green beans and mince the garlic.
Drain the cauliflower and blend or mash with half of the ghee and a pinch of sea salt until smooth and creamy.
Heat a skillet over medium-high heat with a small amount of the remaining ghee.
Season the salmon with salt and pepper, then sear for 4-5 minutes per side until the skin is crisp and the fish is cooked through.
In a separate small pan, sauté the green beans and garlic with the rest of the ghee for 5-6 minutes until tender-crisp and the garlic is toasted.
Plate the salmon over the cauliflower mash with the green beans on the side, finishing with a fresh squeeze of lemon juice.
