PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper for easy cleanup.
Peel and cube the sweet potato into 1/2-inch pieces, then toss them on the baking sheet with 1 tsp of ghee, garlic powder, and a pinch of the sea salt.
Roast the sweet potatoes for 20-25 minutes, tossing halfway through, until the edges are caramelized and the centers are tender.
While the potatoes roast, trim the ends of the green beans and steam them for 4-5 minutes until they are bright green and tender-crisp.
