PREPARATION
Preheat your oven to 400°F.
Scrub the potato clean, prick it several times with a fork, rub with olive oil and a pinch of sea salt, and bake for 45-50 minutes until tender.
While the potato bakes, cook the bacon in a skillet over medium heat until crispy, then crumble and set aside.
