PREPARATION
Heat the extra virgin olive oil in a large non-stick skillet over medium heat.
Add the sliced turkey sausage to the pan and sauté for 3 minutes until the edges are golden and crisp.
Add the fresh baby spinach to the skillet and toss until it is just wilted.
Lower the heat slightly and pour in the egg whites, stirring gently with a spatula until they are mostly set.
Fold in the cottage cheese and continue to cook for 30 seconds just until the cheese is warmed through and the scramble is creamy.
