PREPARATION
Season the cooked sushi rice with rice vinegar in a small bowl.
Slice the sashimi-grade salmon into long, thin strips and butterfly the cooked shrimp.
Julienne the cucumber into matchsticks and slice the avocado into thin wedges.
Place one nori sheet on a bamboo rolling mat and spread 0.25 cup of rice evenly over the surface, leaving the top inch clear.
Layer half of the salmon, shrimp, cucumber, and avocado across the center of the rice.
Roll the nori tightly using the mat, sealing the edge with a small amount of water.
Repeat the process with the second nori sheet and the remaining ingredients.
