Cook the turkey until it is browned and no longer pink, approximately 5-7 minutes.
Stir in the baby spinach and cook for 1 minute until just wilted.
Using your spoon, create two small wells in the turkey and vegetable mixture.
Carefully crack one egg into each well, then cover the skillet with a lid.
Cook for 2-4 minutes, or until the egg whites are fully set but the yolks are still runny.
