Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon served over cauliflower mash and garlic-sautéed green beans, topped with a bright and zesty squeeze of lemon.
INGREDIENTS
6.5 oz Wild Atlantic Salmon Fillet
2 cups Cauliflower Florets
1 cup Fresh Green Beans
1 tsp Grass-fed Ghee
1 tbsp Plain Nonfat Greek Yogurt
1 tsp Avocado Oil
1 clove Garlic, minced
PREPARATION
Steam the cauliflower florets in a basket over boiling water until they are very tender, about 10-12 minutes.
Transfer the steamed cauliflower to a bowl and mash thoroughly with the ghee and Greek yogurt until the consistency is smooth and creamy.
Heat the avocado oil in a large non-stick skillet over medium-high heat.
Season the salmon fillet with a pinch of sea salt and black pepper, then place it skin-side down in the hot skillet.
Sear the salmon for 4-5 minutes per side until the exterior is golden and the center is just opaque.
Remove the salmon from the pan and set aside to rest.
In the same skillet, add the green beans and minced garlic, sautéing for 3-5 minutes until the beans are bright green and crisp-tender.
Serve the salmon over a bed of cauliflower mash with the garlic green beans on the side, finished with a fresh squeeze of lemon juice.
