PREPARATION
Preheat your oven to 375°F (190°C).
Lightly grease two small oven-safe ramekins or one small baking dish with the ghee.

Stir in the sea salt, black pepper, and half of the finely chopped fresh chives.
Pour the egg mixture evenly into the prepared ramekins or baking dish.
Sprinkle the shredded sharp cheddar cheese over the top of the egg mixture.
Place the ramekins on a baking sheet and bake for 12 to 15 minutes, or until the eggs are just set but still have a slight jiggle in the center.
