Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared wild salmon fillets served with crisp-tender garlic green beans and nutty brown rice, finished with a bright squeeze of lemon.
INGREDIENTS
5.5 oz Wild Atlantic Salmon
0.5 cup Cooked Brown Rice
1.5 cups Fresh Green Beans
1 tbsp Extra Virgin Olive Oil
2 cloves Garlic, minced
Pinch of Sea Salt and Black Pepper
1 wedge Lemon
PREPARATION
Prepare the brown rice according to package instructions and set aside.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until cooked through, then remove from the pan and let rest.
In the same skillet, add the remaining olive oil and the green beans.
Sauté the green beans for 5 minutes until crisp-tender, adding the minced garlic in the last 60 seconds of cooking.
Serve the seared salmon alongside the brown rice and garlic green beans with a fresh lemon wedge.
