Garlic Parmesan Chicken Alfredo Pasta
Sautéed chicken breast and whole grain pasta tossed in a creamy, garlic-infused parmesan sauce for a silky and satisfying finish.
INGREDIENTS
4 oz chicken breast
2 oz whole grain penne pasta
0.5 tbsp extra virgin olive oil
2 cloves garlic
2 tbsp plain Greek yogurt
1 tbsp parmesan cheese
0.25 cup low-sodium chicken broth
0.25 tsp sea salt
0.25 tsp black pepper
1 tsp fresh parsley
PREPARATION
Boil a pot of water and cook the penne pasta according to package directions until al dente.
While pasta cooks, season the chicken breast with sea salt and black pepper.
Heat olive oil in a large skillet over medium heat and sauté the chicken until golden and cooked through, then slice into bite-sized pieces.
Remove chicken from the pan and set aside; in the same pan, add minced garlic and sauté for 30 seconds until fragrant.
Whisk in the chicken broth and Greek yogurt, stirring constantly over low heat to create a smooth sauce.
Stir in the parmesan cheese until melted, then return the chicken and cooked pasta to the pan.
Toss everything together until the pasta is coated in the silky sauce and garnish with fresh parsley.
