INGREDIENTS
7 oz Salmon Fillet
1.5 cups Cauliflower florets
1 cup Green Beans
2 tsp Extra Virgin Olive Oil
1 tbsp Non-fat Greek Yogurt
1 clove Garlic
1 tsp Lemon Juice
PREPARATION
Place the cauliflower florets and the peeled garlic clove in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
During the last 5 minutes of steaming the cauliflower, add the green beans to the steamer basket and cook until they are bright green and crisp-tender.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 3-4 minutes until cooked through.
Transfer the steamed cauliflower and garlic to a bowl or food processor, add the Greek yogurt and the remaining teaspoon of olive oil, and blend or mash until smooth.
Plate the garlic cauliflower mash, top with the seared salmon, and serve with the steamed green beans and a drizzle of fresh lemon juice.
