Seared Salmon Fillet with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon served over creamy sweet potato mash with garlic-scented green beans, finished with a squeeze of bright lemon.
INGREDIENTS
8 ounces Wild Atlantic Salmon Fillet
200 grams Sweet Potato, peeled and cubed
1/4 cup Nonfat Plain Greek Yogurt
100 grams Fresh Green Beans
2 teaspoons Extra Virgin Olive Oil
1 clove Garlic, minced
PREPARATION
Place the cubed sweet potatoes in a pot of boiling water and cook for 10-12 minutes until tender.
Drain the potatoes and mash them with the Greek yogurt until smooth and creamy.
While potatoes cook, heat one teaspoon of olive oil in a skillet over medium-high heat.
Season the salmon with salt and pepper, then sear for 4-5 minutes per side until the edges are crisp.
Remove salmon and add the remaining teaspoon of olive oil to the same skillet.
Sauté the green beans and minced garlic for 5 minutes until the beans are tender-crisp.
Plate the salmon over the sweet potato mash with the garlic green beans on the side.
