Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon served over a bed of silky cauliflower mash with garlic-sautéed green beans and a squeeze of fresh lemon.
INGREDIENTS
6.5 oz Salmon Fillet
2 cups Cauliflower florets
1 cup Green beans
1 tbsp Nonfat Greek yogurt
1 tsp Olive oil
1 tsp Ghee
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water for 10-12 minutes until very tender.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and cracked black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4 minutes on the first side until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until cooked through to your preference, then remove from the pan.
In the same skillet or a separate small pan, melt the ghee and sauté the minced garlic for 30 seconds until fragrant.
Add the green beans to the pan and sauté for 5 minutes until they are crisp-tender and coated in garlic butter.
Transfer the steamed cauliflower to a bowl or food processor, add the Greek yogurt and a pinch of salt, and mash or blend until completely smooth.
Plate the salmon over the cauliflower mash and serve with the garlic green beans on the side.
