Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared wild salmon served with creamy garlic cauliflower mash and crisp-tender green beans, finished with a squeeze of bright lemon.
INGREDIENTS
6 oz Wild Atlantic Salmon
2 cups Cauliflower florets
1 cup Green Beans
0.75 tbsp Extra Virgin Olive Oil
2 tbsp Nonfat Greek Yogurt
2 cloves Garlic, minced
1 tbsp Lemon Juice
PREPARATION
Steam the cauliflower florets and minced garlic in a steamer basket over boiling water for 10-12 minutes until very tender.
While cauliflower is steaming, place the green beans in a separate steamer or add them to the cauliflower for the last 5 minutes of cooking until they are crisp-tender.
Pat the salmon fillet dry with a paper towel and season with a pinch of sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon skin-side up in the pan and sear for 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until the internal temperature reaches 145°F.
Transfer the steamed cauliflower and garlic to a bowl or food processor; add the Greek yogurt and mash or blend until smooth and creamy.
Plate the garlic mashed cauliflower and green beans alongside the seared salmon.
Drizzle the fresh lemon juice over the salmon and vegetables before serving.
