1.5 cups Cauliflower Florets
1 cup Green Beans
1 teaspoon Ghee
1 clove Garlic

PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until very tender, about 10-12 minutes.
During the last 5 minutes of steaming the cauliflower, add the green beans to the steamer basket and cook until bright green and snappy.
Transfer the cooked cauliflower to a blender or food processor with the minced garlic, half of the ghee, and a pinch of salt, then process until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat the remaining ghee in a non-stick skillet over medium-high heat.
Place the salmon in the skillet and sear for 4-5 minutes until a golden crust forms, then flip and cook for another 3-4 minutes until the internal temperature reaches 145°F.
Plate the garlic cauliflower mash and green beans, top with the seared salmon, and finish with a fresh squeeze of lemon juice.
