Seared Salmon with Steamed Green Beans and Sweet Potato Mash
Pan-seared salmon fillet served with garlic-steamed green beans and a velvety sweet potato mash.
INGREDIENTS
6 ounces Wild Atlantic Salmon
150 grams Sweet Potato
1 cup Green Beans
1 tablespoon Extra Virgin Olive Oil
1 clove Garlic
PREPARATION
Peel and cube the sweet potato, then boil in water for 12-15 minutes until soft.
While potatoes boil, steam the green beans over simmering water for 5-7 minutes until tender-crisp.
Pat the salmon fillet dry and season both sides with salt and black pepper.
Heat olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4 minutes on each side until golden.
Drain the sweet potatoes and mash them until smooth, stirring in a pinch of salt.
Toss the steamed green beans with minced garlic and serve alongside the salmon and mash.
