Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon fillet served alongside creamy mashed sweet potatoes and garlic-sautéed green beans with a squeeze of bright lemon.
INGREDIENTS
5.8 oz Salmon Fillet
150g Sweet Potato
100g Green Beans
1.5 tsp Extra Virgin Olive Oil
1 clove Garlic
PREPARATION
Peel and cube the sweet potato, then boil in a pot of water for 12-15 minutes until fork-tender.
Drain the potatoes and mash thoroughly with a pinch of sea salt until creamy and smooth.
Pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until golden and cooked through.
In a separate skillet, heat the remaining oil and sauté the green beans and minced garlic for 5-6 minutes until crisp-tender.
Plate the salmon over the warm sweet potato mash and serve with the garlicky green beans on the side.
