PREPARATION
Preheat your oven to 400°F (200°C) and line a small baking sheet with parchment paper.
In a small mixing bowl, whisk together the honey, coconut aminos, hoisin sauce, five spice powder, minced garlic, grated ginger, and beet juice until smooth.
Place the pork tenderloin on the prepared baking sheet and brush half of the glaze mixture over the entire surface of the meat.
Roast the pork for 20 to 25 minutes, removing it halfway through to brush on the remaining glaze, until the internal temperature reaches 145°F.
While the pork rests for 5 minutes, steam the chopped bok choy in a steamer basket for 3 to 4 minutes until bright green and tender.
Toss the steamed bok choy with toasted sesame oil.
Slice the pork tenderloin into thin rounds and serve immediately alongside the sesame bok choy.
