Herb-Crusted Salmon with Roasted Broccoli
Salmon fillets baked with a golden Dijon-herb crust, served alongside tender roasted broccoli for a nutrient-dense and satisfying meal.
INGREDIENTS
6 oz Salmon fillet
1.5 cup Broccoli florets
0.5 tbsp Extra virgin olive oil
1 tbsp Dijon mustard
1 tsp Dried parsley
0.5 tsp Garlic powder
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 tbsp Lemon juice
PREPARATION
Preheat your oven to 400°F and line a large baking sheet with parchment paper for easy cleanup.
Place the broccoli florets on one side of the baking sheet, drizzle with half of the olive oil, and season with a pinch of sea salt and pepper.
In a small mixing bowl, combine the Dijon mustard, dried parsley, garlic powder, and the remaining olive oil.
Place the salmon fillet on the other side of the baking sheet and spread the herb-mustard mixture evenly over the top of the fish.
Roast in the oven for 12 to 15 minutes until the salmon flakes easily with a fork and the broccoli is tender and slightly browned.
Remove from the oven and drizzle the fresh lemon juice over both the salmon and the broccoli before serving.
