3 Turkey Sausage Links
2 cups Fresh Baby Spinach
1 teaspoon Extra Virgin Olive Oil
1/2 medium Avocado
PREPARATION
Heat a non-stick skillet over medium heat and add half of the olive oil.
Place the turkey sausage links in the pan and cook for 3-4 minutes until browned and heated through, then slice into small rounds.
Add the fresh spinach to the same skillet and sauté for 1 minute until just wilted, then remove the sausage and spinach and set aside.
Wipe the skillet clean, add the remaining oil, and pour in the egg whites.
Cook the egg whites undisturbed for 2 minutes until the edges are set, then gently lift the edges to allow any uncooked egg to flow underneath.
Once the egg whites are opaque and firm, place the cooked sausage and spinach on one half of the omelette.
Fold the omelette in half and slide it onto a plate.
Top with fresh avocado slices and a pinch of sea salt or black pepper if desired.
