Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon fillet served with tender steamed green beans and creamy garlic-infused cauliflower mash, finished with a squeeze of bright lemon.
INGREDIENTS
6 oz Salmon Fillet
1.5 cups Cauliflower florets
1 cup Green Beans
2 tbsp Nonfat Plain Greek Yogurt
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
Salt and black pepper to taste
Fresh lemon wedges
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
While cauliflower steams, trim the ends of the green beans and steam them in a separate basket or during the last 5 minutes of the cauliflower cooking time until crisp-tender.
Pat the salmon fillet dry with paper towels and season both sides with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place salmon in the pan skin-side up and sear for 4-5 minutes until a golden crust forms, then flip and cook for another 3-4 minutes until cooked through.
Transfer the steamed cauliflower to a bowl or food processor with the Greek yogurt, minced garlic, salt, and pepper; mash or blend until smooth and creamy.
Plate the garlic mashed cauliflower and green beans alongside the seared salmon.
Serve immediately with a fresh lemon wedge to brighten the flavors.
