INGREDIENTS
6.5 oz Wild Atlantic Salmon Fillet
250g Cauliflower Florets
100g Green Beans
1 tsp Extra Virgin Olive Oil
0.5 tsp Ghee
2 cloves Garlic
PREPARATION
Steam the cauliflower florets until they are very tender and easily pierced with a fork
Transfer the steamed cauliflower to a blender or food processor with the ghee and a pinch of salt and pepper then blend until smooth and creamy
Trim the ends of the green beans and mince the garlic cloves
Heat a skillet over medium heat and add the green beans with a splash of water and the minced garlic cooking until the beans are crisp-tender and the water has evaporated
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper
Heat the olive oil in a separate non-stick skillet over medium-high heat
Place the salmon skin-side down in the hot pan and sear for 4 to 5 minutes until the skin is crispy
Flip the salmon carefully and cook for another 3 to 4 minutes until the fish is opaque and flakes easily
Plate the cauliflower mash first then top with the seared salmon and serve the garlic green beans on the side
