Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served with tender steamed green beans and a garlic-infused cauliflower mash, finished with a squeeze of lemon for a silky texture.
INGREDIENTS
6.5 oz Salmon Fillet
2 cups Cauliflower florets
1 cup Green Beans
2 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
1 tbsp Non-fat Greek Yogurt
Salt, pepper, and lemon to taste
PREPARATION
Place the cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
During the last 5 minutes of steaming the cauliflower, add the green beans to the steamer basket to cook until bright green and crisp-tender.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until cooked through and golden.
Transfer the steamed cauliflower to a bowl or food processor, adding the minced garlic, Greek yogurt, and the remaining teaspoon of olive oil.
Mash or pulse the cauliflower until smooth and creamy, seasoning with salt and pepper to taste.
Plate the seared salmon alongside the garlic mashed cauliflower and steamed green beans, finishing with a fresh squeeze of lemon juice.
