Mix the ingredients with your hands until just combined, being careful not to overwork the meat.
Form the mixture into a rectangular loaf and place it in the center of the prepared baking sheet.
Lay the bacon slices crosswise over the meatloaf, tucking the ends underneath the loaf.
Peel and slice the carrots into 1-inch chunks, then toss them in a bowl with the avocado oil and honey.
Arrange the carrots around the meatloaf on the baking sheet and roast for 35-40 minutes.
Remove from the oven, brush the remaining 0.25 cup of barbecue sauce over the bacon, and roast for another 5-10 minutes until the beef is cooked through.
Let the meatloaf rest for 5 minutes before slicing and serving with the glazed carrots family-style.
