2 tbsp Adzuki beans

PREPARATION
In a small bowl, mash the cooked adzuki beans with maple syrup and a pinch of salt until a thick paste forms then set aside.
In a food processor, blend the silken tofu, vanilla protein powder, glutinous rice flour, and vanilla extract until the mixture is completely smooth.
Transfer the tofu mixture to a microwave-safe glass bowl, cover tightly with parchment paper, and heat on high for 60 seconds.
Remove the bowl and stir the dough vigorously with a wet spatula, then microwave for another 45 seconds until the dough becomes translucent and very sticky.
Dust a clean work surface with the matcha powder and turn the warm mochi dough onto the surface.
Divide the dough into four equal portions using wet hands to prevent the sticky dough from clinging to your skin.
Flatten each piece into a disc, place a small spoonful of the red bean paste in the center, and pinch the edges together to seal.
Roll the filled bites into smooth balls and serve immediately while they are soft and chewy.
