7 oz Cod Fillet
1/2 cup Canned Chickpeas, rinsed and dried
1 tbsp Olive Oil
1.5 cups Fresh Green Beans
1 tsp Garlic Powder
1 tsp Smoked Paprika
PREPARATION
Preheat your oven to 400°F and line a large baking sheet with parchment paper.
Toss the rinsed and thoroughly dried chickpeas with half of the olive oil, smoked paprika, and a pinch of salt.
Spread the chickpeas on the baking sheet and roast for 15 minutes.
While chickpeas roast, season the cod fillet with the remaining olive oil, garlic powder, salt, and pepper.
Move the chickpeas to one side of the tray and place the cod on the other side, then roast for another 10 to 12 minutes until the fish is opaque and flakes easily.
While the fish finishes, steam the green beans in a steamer basket over boiling water for 5 to 7 minutes until bright green and tender-crisp.
Plate the cod alongside the green beans and top the fish with the crispy chickpeas and a fresh squeeze of lemon juice.
