Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served with steamed green beans and a garlic-infused cauliflower mash that is incredibly silky.
INGREDIENTS
6.5 oz Wild Atlantic Salmon Fillet
2 cups Cauliflower Florets
1 cup Green Beans
1 tsp Ghee
1 tsp Extra Virgin Olive Oil
1 tbsp Nutritional Yeast
2 cloves Garlic
PREPARATION
Place cauliflower florets and garlic cloves in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
Add the green beans to the steamer for the last 5 minutes of cooking until they are crisp-tender and bright green.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat ghee in a non-stick skillet over medium-high heat and sear the salmon skin-side down for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 2-3 minutes until the internal temperature reaches 145°F.
Transfer the steamed cauliflower and garlic to a food processor or blender along with the nutritional yeast and a pinch of salt.
Pulse until the cauliflower reaches a smooth, mash-like consistency.
Toss the steamed green beans with olive oil and a pinch of salt.
Plate the salmon alongside the garlic mash and green beans, serving immediately.
