While the base is baking, melt the ghee in a small bowl and whisk in the finely minced fresh garlic and chopped parsley.
Remove the tray from the oven and carefully slice the chicken rectangle into long, even strips to resemble breadsticks.
Brush the garlic-parsley ghee generously over the strips and sprinkle with the remaining parmesan cheese.
