Garlic Herb Butter Steak with Asparagus
Pan-seared grass-fed sirloin basted in a fragrant garlic-herb ghee, served alongside tender roasted asparagus for a meal that is buttery and rich.
INGREDIENTS
6 oz Grass-fed top sirloin steak
1 cup Asparagus
1 tbsp Ghee
0.5 tbsp Extra virgin olive oil
2 cloves Garlic
1 sprig Fresh rosemary
1 sprig Fresh thyme
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Pat the steak dry with paper towels and season both sides with sea salt and black pepper.
Heat the olive oil in a cast-iron skillet over medium-high heat until just smoking.
Place the steak in the skillet and sear for 3-4 minutes per side for medium-rare, or until your desired doneness.
During the last 2 minutes of cooking, add the ghee, smashed garlic cloves, rosemary, and thyme to the pan.
Tilt the pan and spoon the melting herb ghee over the steak repeatedly to infuse flavor.
Remove the steak from the pan and let it rest on a cutting board for at least 5 minutes.
In the same skillet, toss the asparagus in the remaining pan juices and sauté for 3-5 minutes until tender-crisp.
Slice the steak against the grain and serve alongside the buttery asparagus.
