PREPARATION
Combine the oats with half a cup of water in a small saucepan and bring to a simmer over medium heat.
Lower the heat once the water is mostly absorbed and slowly whisk in the egg whites, stirring constantly for two minutes until the oats become voluminous and fluffy.
