Herb-Crusted Salmon with Roasted Asparagus
Tender salmon fillets roasted with a fragrant garlic-herb crust alongside crisp-tender asparagus for a vibrant and nourishing meal.
INGREDIENTS
7 oz Salmon fillet
1.5 cups Asparagus spears
0.5 tbsp Extra virgin olive oil
1 tsp Dried parsley
1 tsp Dried dill
0.5 tsp Garlic powder
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 medium Lemon
PREPARATION
Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper for easy cleanup.
Trim the woody ends off the asparagus spears and spread them out on one side of the prepared baking sheet.
Pat the salmon fillet dry with a paper towel and place it on the other side of the sheet pan.
In a small bowl, whisk together the extra virgin olive oil, dried parsley, dried dill, garlic powder, sea salt, and black pepper.
Brush the herb mixture generously over the top of the salmon and drizzle any remaining oil over the asparagus, tossing the spears to coat evenly.
Roast in the center of the oven for 12 to 15 minutes, or until the salmon flakes easily with a fork and the asparagus is tender and slightly browned.
Remove from the oven and squeeze the fresh lemon juice over both the salmon and asparagus before serving hot.
