PREPARATION
Pat the steak dry with paper towels and season both sides generously with sea salt and black pepper.
Heat avocado oil in a cast-iron skillet over medium-high heat until shimmering.
Place the steak in the hot skillet and sear for 3-4 minutes until a deep golden crust forms.
Flip the steak and add the ghee, smashed garlic cloves, rosemary, and thyme to the pan.
Tilt the pan slightly and use a spoon to continuously baste the steak with the melting herb butter for another 3-4 minutes.
