2.5 cups Cauliflower florets
1 cup Green Beans
1 tsp Avocado Oil
1 tsp Ghee
2 tbsp Non-fat Greek Yogurt
2 cloves Garlic
PREPARATION
Steam cauliflower florets and peeled garlic cloves until very tender, about 10-12 minutes.
Drain cauliflower well and mash or blend with ghee and Greek yogurt until smooth and creamy.
Steam green beans for 4-5 minutes until tender-crisp and bright green.
Season salmon with salt and pepper to taste.
Heat avocado oil in a skillet over medium-high heat.
Sear salmon skin-side down for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes.
