PREPARATION
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Place the broccoli florets on the baking sheet, drizzle with half of the olive oil, and sprinkle with half of the salt and pepper.
Roast the broccoli in the oven for 15 to 20 minutes until the edges are golden and crispy.
While the broccoli roasts, season the chicken breast on both sides with the dried oregano, thyme, and the remaining salt and pepper.
Heat the remaining olive oil in a medium skillet over medium-high heat and sear the chicken for 6 to 7 minutes per side until the internal temperature reaches 165°F.
During the last 2 minutes of cooking, add the minced garlic to the skillet and spoon the fragrant oil over the chicken.
Remove from heat and let the chicken rest for 3 minutes before serving alongside the roasted broccoli with a fresh squeeze of lemon juice.
