INGREDIENTS
7 oz Wild Atlantic Salmon
2 cups Cauliflower florets
1.5 cups Green beans
0.75 tbsp Ghee
2 cloves Garlic, minced
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
While cauliflower steams, trim the ends of the green beans.
Heat half of the ghee in a large skillet over medium heat, add minced garlic and green beans, and sauté for 5-7 minutes until crisp-tender.
Remove green beans from the skillet and set aside.
Season the salmon fillet with sea salt and black pepper.
Add the remaining ghee to the same skillet and increase heat to medium-high.
Place salmon skin-side up in the pan and sear for 4-5 minutes until a golden crust forms, then flip and cook for another 3-4 minutes until desired doneness.
Transfer steamed cauliflower to a bowl and mash thoroughly with a fork or immersion blender until smooth, seasoning with a pinch of salt.
Plate the salmon over the cauliflower mash and serve with the garlic green beans and a fresh lemon wedge.
