6 oz Wild Atlantic Salmon fillet
150g Sweet Potato, cubed
1 cup fresh Green Beans, trimmed
2 tsp Ghee or clarified butter
1 tbsp fresh Lemon Juice

PREPARATION
Place the cubed sweet potatoes in a pot of boiling water and cook until tender, about 10-12 minutes.
While potatoes boil, set up a steamer basket over another pot of simmering water and steam the green beans until they are crisp-tender and bright green.
Pat the salmon fillet completely dry with a paper towel and season both sides with sea salt and black pepper.
Heat one teaspoon of ghee in a non-stick or cast-iron skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes until desired doneness is reached.
Drain the sweet potatoes and mash them thoroughly with the remaining teaspoon of ghee and a pinch of salt until smooth and velvety.
