Beef and Cheddar Potato Bake
Lean ground beef sautéed with aromatic onions and garlic, topped with velvety mashed potatoes and a layer of melted sharp cheddar cheese.
INGREDIENTS
6.5 oz Ground beef (93% lean)
0.5 medium Russet potato
0.25 oz Sharp cheddar cheese
0.25 cup Yellow onion
1 clove Garlic
0.25 tsp Olive oil
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tbsp Beef bone broth
1 tbsp Unsweetened almond milk
PREPARATION
Peel and cube the potato, then boil in salted water until tender, about 15 minutes.
While the potato boils, heat olive oil in a skillet over medium heat and sauté the diced onion and garlic until fragrant.
Add the ground beef to the skillet, seasoning with half of the salt and pepper, and cook until browned and crumbled.
Stir the beef bone broth into the meat mixture to keep it moist, then transfer the beef to a small oven-safe baking dish.
Drain the potato and mash it with the almond milk and the remaining salt and pepper until smooth and velvety.
Spread the mashed potatoes evenly over the beef layer and sprinkle with the shredded cheddar cheese.
Place under a broiler for 2-3 minutes until the cheese is bubbly and slightly golden.
