Garlic Herb Pan-Seared Pork Steaks
Thick pork steaks pan-seared to a golden brown and basted with aromatic garlic and fresh herbs for a succulent finish.
INGREDIENTS
6 oz Pork shoulder steak
0 tsp Ghee
2 cloves Garlic
1 sprig Fresh rosemary
1 sprig Fresh thyme
0.5 tsp Sea salt
0.25 tsp Black pepper
1 cup Asparagus spears
1 tsp Lemon juice
PREPARATION
Pat the pork steaks dry with a paper towel and season both sides evenly with sea salt and black pepper.
Heat the ghee in a large cast-iron skillet over medium-high heat until shimmering.
Place the pork steaks in the skillet and sear for 4 to 5 minutes without moving them to develop a deep golden crust.
Flip the steaks and add the smashed garlic cloves, rosemary, and thyme to the pan.
Tilt the skillet slightly and use a spoon to continuously baste the pork with the hot herb-infused ghee for the final 2 minutes of cooking.
Transfer the pork to a cutting board to rest for 5 minutes.
Add the asparagus spears to the same skillet and sauté in the remaining juices for 3 to 4 minutes until tender-crisp.
Finish the asparagus with a squeeze of fresh lemon juice and serve alongside the rested pork steaks.
