Pan-Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared salmon fillet served with garlic-sautéed green beans and nutty brown rice, finished with a squeeze of fresh lemon for a bright, zesty finish.
INGREDIENTS
7 oz Salmon Fillet
1/2 cup Cooked Brown Rice
1 cup Green Beans
2 cloves Garlic
1 tsp Extra Virgin Olive Oil
1 tbsp Lemon Juice
PREPARATION
Cook the brown rice according to package directions until tender and fluffy.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4 to 5 minutes until the skin is crispy and golden.
Carefully flip the fillet and cook for another 3 to 4 minutes until the center is just opaque.
Remove the salmon from the pan and set aside to rest.
Add the remaining oil to the same skillet along with the minced garlic and green beans.
Sauté the beans for about 5 minutes until they are tender-crisp and the garlic is fragrant.
Serve the salmon over the brown rice with the green beans on the side and finish with a fresh squeeze of lemon juice.
