PREPARATION
Preheat your oven to 425°F.
Place baby potatoes in a pot of salted water and boil for 10-12 minutes until fork-tender.
While potatoes boil, mince the garlic, rosemary, and thyme, then combine them in a small bowl with olive oil, sea salt, and black pepper.
Rub the garlic-herb paste evenly over the entire surface of the beef tenderloin.
Place the beef in a roasting pan and roast for 20-25 minutes, or until the internal temperature reaches 135°F for medium-rare.
Drain the cooked potatoes, place them on a parchment-lined baking sheet, and use a fork to gently smash each one.
