Seared Salmon Fillet with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon served over a velvety sweet potato mash with garlic-scented green beans and a finishing touch of flaky sea salt.
INGREDIENTS
11 ounces Wild Atlantic Salmon Fillet
150 grams Sweet Potato
150 grams Fresh Green Beans
1.5 teaspoons Extra Virgin Olive Oil
2 cloves Garlic, minced
PREPARATION
Peel and cube the sweet potato, then boil in salted water until tender, about 12-15 minutes.
Drain the potatoes and mash until smooth, seasoning with a pinch of salt and pepper to taste.
While potatoes boil, trim the green beans and mince the garlic cloves.
Heat half of the olive oil in a skillet over medium heat, add green beans and a splash of water, then cover and steam for 3 minutes.
Remove the cover, add the minced garlic to the beans, and sauté for 2 more minutes until the beans are tender-crisp, then set aside.
Pat the salmon fillet dry with paper towels and season both sides with salt and pepper.
Heat the remaining oil in the skillet over medium-high heat and sear the salmon for 4-5 minutes per side until golden and cooked through.
Plate the sweet potato mash, top with the seared salmon fillet, and serve the garlic green beans on the side.
