Burrata with Roasted Tomatoes and Basil
Tender chicken breast and blistered cherry tomatoes roasted to perfection, served with a center of creamy burrata and fragrant fresh basil.
INGREDIENTS
4.5 oz chicken breast
1.5 cup cherry tomatoes
2 oz burrata cheese
0.5 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
0.25 tsp sea salt
0.25 tsp black pepper
1 clove garlic
0.25 cup fresh basil leaves
PREPARATION
Preheat your oven to 400°F (200°C).
On a parchment-lined baking sheet, toss the cherry tomatoes and minced garlic with half of the olive oil and a pinch of salt and pepper.
Roast the tomatoes for 15-18 minutes until they are blistered and have released their juices.
While the tomatoes roast, season the chicken breast with the remaining salt and pepper.
Heat a skillet over medium-high heat and cook the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F.
Slice the chicken into strips and arrange them on a serving plate.
Top the chicken with the warm roasted tomatoes and their juices.
Place the burrata cheese in the center of the plate and break the skin slightly to let the creamy center flow out.
Drizzle the entire dish with the remaining olive oil and balsamic vinegar, then garnish with hand-torn fresh basil.
