Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared wild salmon served over creamy cauliflower mash with garlic-sautéed green beans, finished with a squeeze of bright lemon.
INGREDIENTS
6.5 oz Wild Salmon Fillet
1.5 cups Cauliflower florets
1 cup Green beans
2 tsp Extra Virgin Olive oil
1 tbsp Nonfat Greek yogurt
1 clove Garlic, minced
PREPARATION
Steam the cauliflower florets until very tender, approximately 10 to 12 minutes.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4 to 5 minutes per side until the skin is crisp and the flesh is opaque.
Remove the salmon from the pan and set aside to rest.
In the same skillet, add the remaining teaspoon of olive oil along with the green beans and minced garlic, sautéing for 5 minutes until the beans are bright green and crisp-tender.
Place the steamed cauliflower in a blender or food processor with the Greek yogurt and a pinch of salt, processing until completely smooth and creamy.
Spread the cauliflower mash onto a plate, top with the seared salmon, and serve alongside the garlicky green beans with an optional squeeze of fresh lemon.
