Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon and cauliflower mash served with sautéed green beans and a finishing touch of toasted garlic.
INGREDIENTS
7.2 ounces Salmon Fillet
2 cups Cauliflower Florets
1.5 cups Green Beans
1 tablespoon Extra Virgin Olive Oil
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets until they are very tender, about 10-12 minutes.
Transfer the steamed cauliflower to a blender or use a potato masher to process until smooth, adding a pinch of sea salt and pepper.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4 to 5 minutes per side until golden and cooked through.
Remove the salmon from the pan and add the remaining olive oil along with the green beans and minced garlic.
Sauté the green beans for 5-6 minutes until they are bright green and crisp-tender with toasted garlic bits.
Plate the salmon over a generous bed of cauliflower mash with the garlic green beans on the side.
