6.5 oz Salmon Fillet
1.5 cups Cauliflower florets
1 cup Asparagus spears
0.5 tsp Ghee
1 clove Garlic, minced
1 tsp Lemon Juice
0.25 tsp Sea Salt
0.125 tsp Black Pepper
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
While cauliflower steams, trim the woody ends off the asparagus and set aside.
Pat the salmon fillet dry with a paper towel and season both sides with half of the salt and pepper.
Heat a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until golden brown and cooked to your preference.
In the last 5 minutes of salmon cooking, add the asparagus to the steamer basket with the cauliflower to lightly steam until bright green and crisp-tender.
Remove the steamed cauliflower and place in a bowl or food processor with the minced garlic, ghee, and remaining salt and pepper, then mash or blend until smooth.
Plate the garlic cauliflower mash, top with the seared salmon, and serve the steamed asparagus on the side.
Drizzle the entire dish with fresh lemon juice before serving.
