PREPARATION
Heat a non-stick skillet over medium heat and add the avocado oil.
Slice the turkey sausage into rounds and lightly brown them in the skillet for 2-3 minutes.
Add the fresh spinach to the pan and sauté until just wilted, then remove the sausage and spinach and set aside.
Wipe the skillet if necessary and pour in the egg whites, letting them cook undisturbed until the edges begin to set.
