4 whole Mini sweet peppers
0.5 cup Microgreens
0.5 tbsp Hemp hearts
2 tbsp Tamari
0.5 tsp Toasted sesame oil
0.5 tsp Garlic powder
1 tsp Fresh ginger
2 tbsp Rice vinegar
PREPARATION
Press tofu for 15 minutes to remove excess moisture, then slice into long, thin batons.
Season tofu with one tablespoon of tamari, garlic powder, and ginger, then pan-sear in sesame oil until golden and crisp.
Thinly slice the mini sweet peppers and carrots into matchsticks.
Dip one rice paper sheet into warm water for 5 seconds until pliable and lay flat on a clean surface.
Layer the tofu, peppers, carrots, microgreens, and a sprinkle of hemp hearts in the center of the paper.
Fold the bottom over the filling, tuck in the sides, and roll tightly. Repeat with remaining sheets.
Serve immediately with a side of rice vinegar and the remaining tamari for dipping.
